Ingredients for 6 servings: 100 gr white flour
200 gr honey
150 gr cocoa powder
50 gr chocolate
300 gr raisin
200 gr almonds
200 gr walnut kernels
200 gr hazelnuts
100 gr pinenuts
Ready in: about 70 minutes
How to prepare the recipe: "Chocolate truffles with dried fruit":
Soak the raisin in a bowl for about 10 minutes, then drain and wring well. In another bowl with warm water, wet the hazelnuts and almonds, then dry them with a cloth, rubbing well in order to eliminate the skin. Finally coarsely chop the raisin, hazelnuts, walnuts, almonds and pinenuts.
Melt the honey, warming it a bagnomaria (bain-marie) or in a pot at very low heat. Put the chopped dry fruit and raisin in a big bowl, add the cocoa, flour, grated chocolate and the hot honey. Mix with a wooden spoon until you get a dense mixture.
Take the dough a little by little and with your hands form many little balls; put them on a plaque and bake in the oven at 200 °C for about 30 minutes.
Chef's advice
If you want give more flavour to the raisin, instead of water soak it in a Passito wine or another liqueur of your choice.
I suggest to serve this sweet with Rum Anejo.
