Neapolitan style pasta with beans

Pasta e fagioli alla napoletana

Ingredients for 4 servings:
150 gr dried kidney beans
150 gr short pasta
4 tbsp extra virgin olive oil
1 tbsp tomato paste
1 stick of celery, minced
1 tbsp parsley, minced
1 clove of garlic, minced
1 carrot, minced
Salt
Pepper

Ready in: about 150 minutes


How to prepare the recipe: "Neapolitan style pasta with beans":
Soake the beans into water for 12 hours. Drain, put into a pan with 2 liters of water and boil for 1 hour and half.
Meanwhile in another pan brown the celery, garlic, carrot and parsley into the oil; add the tomato paste, salt, pepper, 1/3 of beans and the cooking water.
Mix the remaining beans, put into the pan and, if necessary, add some more water.
Add the past and cook for 15 minutes more.
This dish is very good hot or cold.

Preparation time: 20 minutes (+ 12 hours)
Cooking time: 130 minutes
Calories: 350 calories per person
Difficulty: easy
