Ingredients for 4 servings: Dough:
400 gr flour
2 eggs
Filling:
400 gr mozzarella cheese
100 gr ham
100 gr Roman ricotta
Parsley
4 tbsp of grated Grana Padano cheese
1 egg
Pepper
Salt
Seasoning:
1 cup of tomato sauce
8 tbsp of grated Grana Padano cheese
Ready in: about 120 minutes
How to prepare the recipe: "Ravioli with mozzarella cheese":
Cut the mozzarella into little dices. Chop the ham. Clean, wash and chop the parsley. Sift the ricotta into a large bowl.
Mix every ingredient you have previously prepared adding the Grana Padano, one egg, a pinch of pepper and a little salt. Mix well.
Knead the flour with the eggs and as much warm water as needed to get a dough with the right consistency; then roll out the dough and make ravioli.
When done, heat the tomato sauce.
Boil the ravioli into abundant boiling salted water. As they are ready, drain them and place into a tureen alternating one layer of ravioli, one layer of tomato sauce and one layer of grated Grana Padano.
Serve hot.
Chef’s advices
You can replace mozzarella with provola cheese or smoked provola cheese, or mix the same quantities of mozzarella and smoked provola cheese.
I suggest to pair this dish with Bonarda (red wine).
