Ingredients for 4 servings: 200 gr fresh porcini mushrooms
1 big onion
White flour
50 gr grated Grana Padano cheese
100 gr butter
6 eggs
1 cup of milk
Parsley
Oil
Salt
Pepper
Ready in: about 90 minutes
How to prepare the recipe: "Mushrooms croquettes":
Chop the onion and fry slightly with a knob of butter and a little oil, add minced mushrooms; fry slightly and slowly, sprinkle with parsley and add 30 gr of flour, soak with the boiling milk, salt, pepper and add the cheese.
Cook until it is solidified.
Cook 3 eggs in water for 7-8 minutes, minced them and add to the mushrooms with two raw yolks.
Mix well and let it cool completely. Then, take the mixture half tbsp at a time and, with floured hands, shape round little croquettes; pass the croquettes into the remaining beaten egg and albumens with a pinch of salt. Fry into butter.
Chef's advice
Instead of fresh porcini mushrooms you can use 30 gr of dried mushrooms; soak them into warm water for half an hour, drain, squeeze and dry, then go on with the recipe.
The recommended wine is Lugana (white) or Buttafuoco (red).
