Ingredients for 8 servings: For the cake:
1 disk of sponge cake
½ glass of Grand Marnier
For the biscuit:
200 gr sugar
200 gr butter
200 gr almonds flour
200 gr white flour
For the zabaione (eggnog)
8 yolks
250 gr sugar
250 ml Moscato wine
200 ml Marsala wine
7 tbsp of white flour
For the glaze:
130 gr dark chocolate
20 gr butter
3 eggs
2 tbsp of icing sugar
Ready in: about 70 minutes
How to prepare the recipe: "Chocolate glazed cake":
Take a bowl and using a whisk, mix the butter (previously softned) with the sugar. Add the almonds flour and the white one. Spread the mixture into two round molds (with the same diameter of the round sponge cake) to 1 cm thick. Bake at 180 °C for about 20 minutes.
In the meantime, let’s make the zabaione: beat the yolks with the sugar, add the flour, the Moscato and the Marsala. Cover with a cloth and put in the fridge. In another bowl make the chocolate glaze, beating the eggs with the icing sugar, then add the butter and the chocolate previously melted.
Get the sponge cake and sprinkle it with the Grand Marnier. Get a serving plate, place the first biscuit disc and spread a layer of zabaione, then place on the sponge cake disk, spread another layer of zabaione and finish with the second biscuit disc. Spread the chocolate glaze over and around the cake. Decorate as you like.

Chef's advice
When you make the chocolate glaze, to avoid that the melted chocolate hardens immediately, put the bowl over a pan filled with hot water.
I suggest to serve this cake with white grappa.
